Quick Muesli Bars
Ingredients
100 g (½ cup) butter, melted
170 g (½ cup) honey
125 g (½ cup) peanut butter (or any nut butter) or replace with butter or oil if you prefer not to have nut butters.
½ teaspoon salt
50 g (½ cup) brown sugar
150 g (1⅔ cups) rolled oats
50 g (½ cup) desiccated coconut
180 g (1¼ cups) trail mix (nuts, seeds & dried fruit)
40 g (⅓ cup) plain flour
25 g (1 cup) puffed rice cereal (Rice Bubbles/Rice Krispies or similar)
85 g (½ cup) chocolate chips
Preheat your oven to 160°C fan-forced. Lightly grease a rectangular slice tin and line it with baking paper.
Combine the butter, honey, and peanut butter in a pot until just melted and stir until smooth.
Mix in the the rolled oats, coconut, trail mix, plain flour, puffed rice and remaining ingredients. Stir everything together, then let the mixture cool slightly.
Fold through the chocolate chips or put them on top.
Transfer the mixture into your prepared tin, pressing it down firmly and evenly.
Bake for 25–30 minutes or until lightly golden on top. Allow the slice to cool completely in the tin before cutting into pieces.
